Harmony prevails too in the city of Forlì – we are still in the Italian Emilia-Romagna Region – where our Mamertino White Wine is made of a special combination of two grape varieties: Chardonnay & Soave.
In order to achieve the perfect and distinctive harmony of acidity, the Chardonnay and Soave bunches are harvested in advance than the usual time. That’s why the content of alcohol can be kept under control for enhancing the splash of freshness that only a very well balanced acidity can deliver to the palate.
A second fermentation pushes the pression up to three atmospheres in the autoclaves. The fizzy wine is then kept at the cold temperature of – 4° C° for about two weeks … and that’s just to hone the refined and lingering bubbles – they can be called PERLAGE, as this French Word perfectly describe the tingling freshness that MAMERTINO refined bubbles release to the palate.
Historical Quirkness: The MAMERTIN-I, the final letter –i defines the plural of MAMERTIN-O, were the mercenaries from the Italian Naples Area that dwelt in the Sicilian City of Messina during the First Punic War (264 b.C.). The MAMERTINI asked for help to the Roman Empire to get rid of the Chartaginians – inhabitant of ancient Carthage – who wanted to conquer Messina.
Mamertino's vibrant, fruit-forward flavors make it an ideal ingredient for a wide variety of cocktails.
The unique effervescence of Mamertino enhances contrasting and complementary flavors.
